Marinate the fish with olive oil, chopped chives and salt and pepper. Keep aside.
Heat a pan with olive oil and sauté garlic, red bell pepper(roasted), add Vinegar and sugar then reduce for 3 minutes. Pass through in a food processor until smooth consistency.
Boil the potatoes on half way through, add cauliflower pieces in to the boiling water, cook fully and drain through a colander. Reuse the same pot to mash the cauliflower and potatoes by using a potato masher, finally add heavy cream and season.
Make ½ inch slices of tomatoes and yellow squash, grill them with olive oil and seasonings
Prepare a Crab salsa with diced yellow pepper, tomatoes and diced crab meat, then tossed with olive oil and chives. Season as require.
Heat the olive oil and grilled the fish for 15 minute in both sides.
Assemble the plate with pepper sauce and a scoop of cauliflower mash potatoes and grilled yellow squash and tomatoes, arrange the grilled fish and then the crab salsa. Finally sprinkle with dry chilli flakes.
