Spring Stew

[ Serves 4 ]

Ingredients:

  • 200 gms 5 mix lentils
  • 50 gms chopped Onion
  • 1/4 tsp Ajwain seeds
  • 2 tbsp chopped Garlic
  • 1 tbsp Veg Biryani masala
  • 1 stem Lemon Grass
  • 50 gms of sliced Leeks
  • 50 gms red Cabbage
  • 50 gms diced Carrots
  • 50 gms diced Beetroots
  • 50 gms diced Pumpkins
  • 2 each Green Chilies
  • Seasoning as required

Procedure:

  1. Cook the 5 mix lentil with a pinch of salt. Cook thoroughly and keep aside with liquid.
  2. Cook all vegetable in a pressure cooker for 10 minutes and give an ice shock to cool down rapidly.
  3. Heat the olive oil then add ajwain, onion, garlic, green chilies, lemon grass, biryani masala and sauté for 2 minutes.
  4. Add all cooked vegetables, sauté for a while then add 5 mix lentil with liquid. Keep cooking for another 10 minutes and season well.

TIPS:- ALL VEGETABLES CAN BE COOKED, COOLED DOWN WITH ICE BATH NIGHT BEFORE
