Vegetable Lasagne

[ Serves 4 ]

Ingredients:

  • 12 each Lasagne sheets premade
  • 100 gms Onions(chopped)
  • 20 gms Garlic(chopped)
  • 100 gms yellow Squash
  • 100 gms zucchini Squash
  • 100 gms Aubergine
  • 200 gms Red Bell Pepper
  • ½ tsp dried Oregano
  • 300 gms Tomatoes(blanched, deseeded and diced)
  • 30 ml Olive oil
  • 200 ml Amul Cream
  • 200 gms Grated Amul Cheese
  • Seasoning as required

Procedure:

  1. Cut Squash, bell peppers, aubergine in rounded ½ inch thick. Marinate the vegetables with olive oil and chopped garlic and dry oregano leaves. Keep for ½ hour  in advance.
  2. Put the pot of water to boil, add 1 tbsp. olive oil and a pinch of salt.
  3. Cook lasagne sheets in the pot for 10 minutes.
  4. Remove from the pot one at a time buy rubbing each sheet with olive oil(to restrict sticking).
  5. Heat a pan and sauté garlic and onion then add deseeded tomatoes cook until the moister from the tomatoes evaporated.
  6. Grill the yellow squash, zucchini squash, aubergines, and red bell peppers, keep aside seasoned.
  7. Take a baking chaina and start layering as steps mentioned below.
    • tomato sauce
    •  lasagne sheet
    •  aubergine
    •  yellow squash
    • green zucchini
    •  red bell peppers
    •  Amul Cream
    •  grated cheese
  8. Then bake for 12 minutes with temperature 160°C in a pre-heat oven
  9. Garnish with Basil sprigs.
